Glazed Orange Carrots
2 lbs. Fresh Carrots, sliced 1/4 inch thick circles 2 tbsp. Butter 1/4 cup Orange Juice Concentrate 2 tbsp. Brown Sugar 2 tbsp. Fresh Parsley, minced |
Place 1 inch of water in saucepan, add carrots. Bring to boil. Reduce heat, cover and simmer for 7-9 min. Drain. Melt butter in a large skillet, stir in orange juice and brown sugar. Add carrots and parsley, stirring to coat. Cook and stir for 1-2 min. or until glaze is thickened. Yields 6 servings |
